MONROE, La. – I got my first invite to a good old fashioned crawfish boil this weekend and I am looking forward to chowing down on some tasty mudbugs. But my friend told me not to freak out about all the things I might see in the boiling pot with the bugs.
Not to worry, I’ve probably seen it before. But no. My friend says these folks go way beyond what you’ve ever seen before. OK, now I’m curious. I ask “what’s gonna be in the pot?” She says these folks are from Breaux Bridge and they are probably going to throw in a whole rabbit, squirrel and maybe even some chicken feet. Seriously, chicken feet in a crawfish pot? That will be something I have never seen, nor will I probably partake of a chicken foot while enjoying the crawfish. The Louisiana Crawfish Board says mudbugs are one of our state’s most popular exports.
But I am open to just about anything tossed in the pot and love to see the creativity. Do you have some favorites? Sausage is probably at the top of my list right alongside the potatoes. But please don’t overdue the spice to show how tough you are. Those potatoes soak up that spice.
